A winemaker is an interventionist; we take a process that is part natural and part man-made and guide that to what we believe will be a satisfying end to us and others. Contrary to some beliefs wine does not make itself, it needs to be created, crafted and nurtured. This takes patients, skill and understanding. It is not a recipe of mixing measured amounts together, that's because there are to many variables involved to be boxed in to the ounce amounts. Yes, there are steps involved that are usually followed the same way each time but variation is what makes for imagination and inspiration and that leads to a great wine!
